Ingredients

  • 1 cup Greek yogurt (full-fat preferred)
  • 2 tablespoons lemon juice
  • 3 minced garlic cloves
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (dill and oregano, or dried equivalents)
  • Bone-in, skin-on chicken thighs or breasts

Instructions

  1. Whisk together Greek yogurt, lemon juice, minced garlic, olive oil, salt, pepper, and herbs in a bowl until smooth.
  2. If using chicken thighs, lightly score the skin to help the marinade penetrate.
  3. Place chicken in a ziplock bag or shallow dish, pour marinade over, and toss to coat. Refrigerate for at least 2 hours (overnight is ideal).
  4. Preheat grill or oven; grill on medium heat for 6-8 minutes per side or roast at 400°F for 25-30 minutes until internal temperature reaches 165°F.
  5. Allow chicken to rest for at least 5 minutes before serving.
  6. Serve with your favorite sides such as grilled veggies or Greek salad.

Notes

For a vegetarian option, marinate firm tofu or hearty vegetables. Adjust marination time and use vinegar instead of lemon juice if desired.
