Description

Delicious and satisfying burritos filled with roasted Hatch chiles, beans, and cheese, perfect for sharing with family and friends.


Ingredients

  • 4 Hatch chiles
  • 4 large flour tortillas
  • 1 can black or pinto beans, drained
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup sour cream or Greek yogurt
  • Fresh cilantro or green onions, for garnish
  • Olive oil, for cooking
  • Salt and pepper, to taste

Instructions

  1. Roast the Hatch chiles over an open flame or in a hot skillet until charred. Cool, peel off the skin, remove seeds, and chop finely.
  2. In a skillet, heat olive oil over medium heat. Add diced onions and minced garlic, sauté until translucent.
  3. Stir in the cooked beans, roasted Hatch chiles, and half of the cheese. Season with salt, pepper, and additional spices if desired.
  4. Lay a tortilla flat, spoon filling down the center, sprinkle with more cheese, fold in sides, and roll tightly.
  5. Heat a non-stick skillet over medium, place burritos seam-side down, and cook for 3-5 minutes on each side until golden brown.
  6. Serve with sour cream, fresh herbs, or salsa.

Notes

You can use canned Hatch chiles if fresh ones are unavailable. Feel free to customize the filling with other vegetables or herbs.
