A vibrant and creamy pasta salad made with fresh herbs, avocado, and colorful vegetables, perfect for gatherings and picnics.
Ingredients

- 2 cups pasta (fusilli or penne)
- 1 ripe avocado
- 1/2 cup fresh basil
- 1/2 cup fresh parsley
- 1/4 cup fresh chives
- Juice and zest of 1 lemon
- 2 cloves garlic
- 1/4 cup olive oil
- Salt and pepper to taste
- 1 cucumber, chopped
- 1 cup cherry tomatoes, halved
- 1 cup sautéed mushrooms (optional)
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente. Drain and rinse with cold water.
- In a blender, combine avocado, herbs, garlic, lemon juice, and olive oil. Blend until smooth, adding water as necessary.
- Chop the vegetables while the pasta is cooking.
- In a large bowl, combine pasta, sautéed mushrooms, and chopped veggies. Pour the dressing over and toss until coated.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
To customize, add seasonal vegetables or swap avocado for Greek yogurt or tahini. Enjoy with grilled proteins or as a light lunch.
