Ingredients

  • 1 cup fresh herbs (basil, parsley, chives)
  • 1 cup diced cucumbers
  • 1 cup halved cherry tomatoes
  • 1 cup diced bell peppers
  • 1/2 cup Green Goddess dressing (store-bought or homemade)
  • 1/2 cup crumbled feta or goat cheese
  • 2 tbsp lemon juice

Instructions

  1. Cook the pasta according to package instructions until al dente, then drain and rinse under cold water.
  2. Chop the vegetables into roughly equal-sized pieces.
  3. In a bowl, whisk together fresh herbs, lemon juice, yogurt or mayonnaise, and minced garlic until well combined.
  4. In a large bowl, mix the cooled pasta, chopped vegetables, and dressing; toss until well coated.
  5. Cover the salad and let it chill in the refrigerator for at least 30 minutes.
  6. Before serving, top with crumbled cheese.
