Ingredients

- 8 oz pasta (bowtie, fusilli, or rotini)
- 1 cup fresh herbs (basil, parsley, chives)
- 1 cup diced cucumbers
- 1 cup halved cherry tomatoes
- 1 cup diced bell peppers
- 1/2 cup Green Goddess dressing (store-bought or homemade)
- 1/2 cup crumbled feta or goat cheese
- 2 tbsp lemon juice
Instructions
- Cook the pasta according to package instructions until al dente, then drain and rinse under cold water.
- Chop the vegetables into roughly equal-sized pieces.
- In a bowl, whisk together fresh herbs, lemon juice, yogurt or mayonnaise, and minced garlic until well combined.
- In a large bowl, mix the cooled pasta, chopped vegetables, and dressing; toss until well coated.
- Cover the salad and let it chill in the refrigerator for at least 30 minutes.
- Before serving, top with crumbled cheese.
Notes
For gluten-free options, use gluten-free pasta or zoodles. You can substitute mayonnaise with Greek yogurt for a lighter version.
