- 1 ripe Pineapple
- 1 cup Coconut Cream
- 2 tablespoons Honey or Brown Sugar (optional)
- Zest of 1 Lime
- Pinch of Salt
Instructions
- Prepare the pineapple: Cut off the top and bottom, slice off the outer skin, and cut into thick rings or wedges.
- Preheat the grill to medium heat for about 10 minutes.
- Grill the pineapple slices for 4-5 minutes on each side until tender and marked.
- Make the coconut cream by whipping it with sweetener and lime zest until smooth.
- Serve the pineapple warm with coconut cream drizzled over it.
Notes
Choose ripe pineapple for best flavor. Chill coconut milk if using as a substitute.
