Ingredients

- 1 pound shrimp (peeled and deveined)
- 2 ripe avocados, diced
- 1 cup fresh corn (or canned/frozen)
- 1 small red onion, diced
- 1 cup diced tomatoes (vine-ripened or cherry)
- 1/2 cup chopped fresh cilantro
- 1 jalapeño, diced (optional)
- Juice of 2 limes
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Marinate the shrimp in olive oil, lime juice, minced garlic, and salt for 20 minutes.
- Preheat the grill to medium-high heat and grill the shrimp for 2-3 minutes on each side until opaque and slightly charred.
- In a mixing bowl, combine diced avocado, corn, red onion, tomatoes, cilantro, and jalapeño.
- Chop the grilled shrimp into bite-sized pieces and add to the salsa mixture.
- Taste and adjust seasoning with additional lime juice or salt as needed.
- Serve immediately with tortilla chips or as a topping for tacos or grilled dishes.
Notes
Keep the avocado separate until just before serving to prevent browning. This salsa is best consumed fresh.
