- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 8 oz cream cheese, softened
- 1 cup confectioner’s sugar
- 1 teaspoon vanilla extract
- Green gel food coloring
Instructions
- Preheat the oven to 350°F (175°C).
- Line a jelly roll pan (15×10 inches) with parchment paper and lightly grease it.
- In a large bowl, beat the eggs and granulated sugar with a hand mixer until fluffy (3-5 minutes).
- In another bowl, whisk together flour, cocoa powder, baking powder, and salt.
- Gradually fold the dry ingredients into the egg-sugar mixture.
- Pour the batter into the prepared pan and bake for 12-15 minutes.
- Let cool in the pan for 5 minutes, then flip onto a towel dusted with confectioner’s sugar and carefully roll up.
- Beat together softened cream cheese, confectioner’s sugar, vanilla, and food coloring until smooth.
- Unroll the cake, spread the filling evenly, and roll back up without the towel.
- Wrap in plastic wrap and refrigerate for at least 1 hour.
- Slice, serve, and enjoy!
