- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1/2 cup powdered sugar
- 1/2 cup heavy cream
- 1 tsp mint extract or green food coloring
- 1 cup graham crackers, crushed
- 1/4 cup unsalted butter, melted
Instructions
- Preheat your oven to 325°F (163°C). In a mixing bowl, combine crushed graham crackers with melted butter, mixing until they resemble wet sand. Press the mixture into the bottoms of a lined muffin tin and bake for about 5 minutes to set.
- Beat the softened cream cheese and sugar in a bowl until smooth and creamy. Add mint extract and food coloring, blending until combined.
- Whip the heavy cream in a separate bowl until stiff peaks form, then gently fold it into the cream cheese mixture.
- Spoon the cheesecake mixture over the cooled crusts in the muffin tin.
- Cover with plastic wrap and refrigerate for at least 240 minutes, or overnight, until set.
- Pipe whipped cream on top, then sprinkle with festive toppings before serving.
Notes
For a lighter version, substitute heavy cream with Greek yogurt. You can also use Oreo cookies for the crust for a chocolate variation.
