Description

Delightful mini cheesecakes inspired by the Grinch, featuring a creamy filling with hints of mint and a buttery graham cracker crust.


Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1/2 cup heavy cream
  • 1 tsp mint extract or green food coloring
  • 1 cup graham crackers, crushed
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 325°F (163°C). In a mixing bowl, combine crushed graham crackers with melted butter, mixing until they resemble wet sand. Press the mixture into the bottoms of a lined muffin tin and bake for about 5 minutes to set.
  2. Beat the softened cream cheese and sugar in a bowl until smooth and creamy. Add mint extract and food coloring, blending until combined.
  3. Whip the heavy cream in a separate bowl until stiff peaks form, then gently fold it into the cream cheese mixture.
  4. Spoon the cheesecake mixture over the cooled crusts in the muffin tin.
  5. Cover with plastic wrap and refrigerate for at least 240 minutes, or overnight, until set.
  6. Pipe whipped cream on top, then sprinkle with festive toppings before serving.

Notes

For a lighter version, substitute heavy cream with Greek yogurt. You can also use Oreo cookies for the crust for a chocolate variation.
