- 1/2 cup granulated sugar
- 1/4 cup sour cream
- 1 tsp vanilla extract
- 1/2 tsp peppermint extract
- Green food coloring, as needed
- 1 cup graham cracker crumbs
- 1/4 cup melted butter
Instructions
- Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until moistened. Press firmly into greased mini muffin tin for the crust.
- Beat the softened cream cheese with granulated sugar until smooth and creamy. Add sour cream, vanilla extract, and peppermint extract; mix well. Incorporate a few drops of green food coloring.
- Scoop the cheesecake mixture into the muffin tin, filling each crust almost to the top. Bake for 15-20 minutes, until tops are slightly set.
- Let the mini cheesecakes cool at room temperature, then refrigerate for at least 2 hours. Garnish with whipped cream and crushed peppermint candies before serving.
- Carefully remove the mini cheesecakes from the tin and arrange them on a platter to enjoy.
