  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter

Instructions

  1. Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until moistened. Press firmly into greased mini muffin tin for the crust.
  2. Beat the softened cream cheese with granulated sugar until smooth and creamy. Add sour cream, vanilla extract, and peppermint extract; mix well. Incorporate a few drops of green food coloring.
  3. Scoop the cheesecake mixture into the muffin tin, filling each crust almost to the top. Bake for 15-20 minutes, until tops are slightly set.
  4. Let the mini cheesecakes cool at room temperature, then refrigerate for at least 2 hours. Garnish with whipped cream and crushed peppermint candies before serving.
