Ingredients

  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon (optional)
  • ½ teaspoon nutmeg (optional)
  • 2 large eggs
  • Butter or oil for cooking

Instructions

  1. Blend the spinach with the milk until smooth.
  2. In a separate bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, combine the spinach mixture, eggs, and vanilla extract and mix well.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently.
  5. Heat a non-stick skillet over medium heat and grease it lightly.
  6. Pour ¼ cup of batter onto the skillet for each pancake; cook until bubbles form, about 2-3 minutes.
  7. Flip and cook for another 2 minutes until golden brown.
  8. Serve warm with your favorite toppings.

Notes

Let the batter rest for 10 minutes for best results. Avoid overmixing to keep pancakes fluffy.
