- 1 cup whole milk (or almond/oat milk)

- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon (optional)
- ½ teaspoon nutmeg (optional)
- 2 large eggs
- Butter or oil for cooking
Instructions
- Blend the spinach with the milk until smooth.
- In a separate bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- In a large bowl, combine the spinach mixture, eggs, and vanilla extract and mix well.
- Gradually add the dry ingredients to the wet ingredients, stirring gently.
- Heat a non-stick skillet over medium heat and grease it lightly.
- Pour ¼ cup of batter onto the skillet for each pancake; cook until bubbles form, about 2-3 minutes.
- Flip and cook for another 2 minutes until golden brown.
- Serve warm with your favorite toppings.
Notes
Let the batter rest for 10 minutes for best results. Avoid overmixing to keep pancakes fluffy.
