Description

A comforting bowl of fried rice with savory ground beef and colorful vegetables, perfect for busy weeknights.

Ingredients

Scale
  • 1 lb lean ground beef
  • 2 cups day-old cooked rice
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Gather all ingredients and chop vegetables. If starting from scratch, cook the rice and let it cool.
  2. Cook the Ground Beef: Heat oil in a large skillet or wok over medium-high heat. Add ground beef, breaking it apart with a spoon. Cook until browned, then drain excess fat.
  3. Add Aromatics: Stir in minced garlic and ginger, cooking for about 30 seconds until fragrant.
  4. Incorporate Vegetables: Add vegetables into the skillet and stir-fry for a few minutes until tender-crisp.
  5. Add the Rice: Push mixture aside, adding more oil if necessary. Add cold rice, breaking clumps, and let sit to get slightly crispy.
  6. Mix Together: Combine everything in the skillet, drizzle with soy sauce and sesame oil, and stir well to coat.
  7. Scramble the Eggs: Move rice to one side, crack eggs into the empty space, scramble until cooked, then mix into the rice.
  8. Finish and Serve: Stir in scallions, toss everything together, and serve immediately. Garnish with sesame seeds or extra green onions if desired.

Notes

Using day-old rice ensures the best texture. Adjust the vegetables based on personal preference.
