Instructions
- Prepare the Ingredients: Gather all ingredients and chop vegetables. If starting from scratch, cook the rice and let it cool.
- Cook the Ground Beef: Heat oil in a large skillet or wok over medium-high heat. Add ground beef, breaking it apart with a spoon. Cook until browned, then drain excess fat.
- Add Aromatics: Stir in minced garlic and ginger, cooking for about 30 seconds until fragrant.
- Incorporate Vegetables: Add vegetables into the skillet and stir-fry for a few minutes until tender-crisp.
- Add the Rice: Push mixture aside, adding more oil if necessary. Add cold rice, breaking clumps, and let sit to get slightly crispy.
- Mix Together: Combine everything in the skillet, drizzle with soy sauce and sesame oil, and stir well to coat.
- Scramble the Eggs: Move rice to one side, crack eggs into the empty space, scramble until cooked, then mix into the rice.
- Finish and Serve: Stir in scallions, toss everything together, and serve immediately. Garnish with sesame seeds or extra green onions if desired.
