- 4 Bell Peppers (red, yellow, or green)
- 1 lb Lean Ground Turkey
- 1 Medium Yellow Onion, chopped
- 2 cloves Garlic, minced
- 1 cup Mushrooms (white or cremini), chopped
- 1 cup Rice or Quinoa, cooked
- 1 cup Cheese (Cheddar or Mozzarella), shredded
- Salt to taste
- Pepper to taste
- 1 tsp Oregano or Thyme
- Olive Oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds.
- In a large skillet, heat olive oil over medium heat and sauté chopped onions until translucent.
- Add minced garlic and chopped mushrooms, cooking until tender.
- Stir in the ground turkey and cook until browned.
- In a bowl, combine the turkey mixture with cooked rice or quinoa, and season with salt, pepper, and herbs.
- Generously fill the hollowed peppers with the turkey mixture, and top with cheese.
- Place stuffed peppers in a baking dish with a little water at the bottom, cover with foil, and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes until cheese is golden.
- Let cool for a few minutes before serving.
Notes
Customize with additional vegetables or spices according to your taste. Great for leftovers or freezing.
