Description

A wholesome and heartwarming dish featuring bell peppers filled with savory ground turkey and a medley of flavors.


Ingredients

  • 4 Bell Peppers (red, yellow, or green)
  • 1 lb Lean Ground Turkey
  • 1 Medium Yellow Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Mushrooms (white or cremini), chopped
  • 1 cup Rice or Quinoa, cooked
  • 1 cup Cheese (Cheddar or Mozzarella), shredded
  • Salt to taste
  • Pepper to taste
  • 1 tsp Oregano or Thyme
  • Olive Oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a large skillet, heat olive oil over medium heat and sauté chopped onions until translucent.
  4. Add minced garlic and chopped mushrooms, cooking until tender.
  5. Stir in the ground turkey and cook until browned.
  6. In a bowl, combine the turkey mixture with cooked rice or quinoa, and season with salt, pepper, and herbs.
  7. Generously fill the hollowed peppers with the turkey mixture, and top with cheese.
  8. Place stuffed peppers in a baking dish with a little water at the bottom, cover with foil, and bake for 30 minutes.
  9. Remove the foil and bake for an additional 10 minutes until cheese is golden.
  10. Let cool for a few minutes before serving.

Notes

Customize with additional vegetables or spices according to your taste. Great for leftovers or freezing.
