- 2 lbs beef chuck, cut into bite-sized pieces
- 1 bottle (12 oz) Guinness beer
- 4 medium carrots, chopped
- 4 medium potatoes, diced
- 1 large onion, diced
- 3 cloves garlic, minced
- 3 cups beef broth
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper to taste
- Oil for searing
Instructions
- Prepare your ingredients: Chop beef, slice carrots and potatoes, dice onion, and mince garlic.
- In a heavy-bottomed pot or Dutch oven, heat oil over medium-high heat and sear the beef in batches until browned.
- Add onions and garlic, sautéing until softened.
- Deglaze the pot with Guinness, scraping the bottom to loosen browned bits.
- Add carrots, potatoes, thyme, bay leaves, and beef broth. Bring to a boil.
- Cover, reduce heat, and let simmer for 1.5 to 2 hours until meat is tender.
- Adjust salt and pepper to taste, and serve hot with crusty bread or over mashed potatoes.
Notes
For a lighter version, you can substitute beef broth with vegetable broth. This stew also tastes great with a splash more Guinness at the end!
