Description

A hearty and comforting stew that combines tender beef, earthy vegetables, and the rich flavor of Guinness beer, perfect for gatherings or cozy dinners.


Ingredients

  • 2 lbs beef chuck, cut into bite-sized pieces
  • 1 bottle (12 oz) Guinness beer
  • 4 medium carrots, chopped
  • 4 medium potatoes, diced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Oil for searing

Instructions

  1. Prepare your ingredients: Chop beef, slice carrots and potatoes, dice onion, and mince garlic.
  2. In a heavy-bottomed pot or Dutch oven, heat oil over medium-high heat and sear the beef in batches until browned.
  3. Add onions and garlic, sautéing until softened.
  4. Deglaze the pot with Guinness, scraping the bottom to loosen browned bits.
  5. Add carrots, potatoes, thyme, bay leaves, and beef broth. Bring to a boil.
  6. Cover, reduce heat, and let simmer for 1.5 to 2 hours until meat is tender.
  7. Adjust salt and pepper to taste, and serve hot with crusty bread or over mashed potatoes.

Notes

For a lighter version, you can substitute beef broth with vegetable broth. This stew also tastes great with a splash more Guinness at the end!
