- 1 ¾ cups all-purpose flour (or gluten-free flour)
- ¾ cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 2 large eggs
- ½ cup buttermilk (or dairy-free milk)
- ½ cup vegetable oil (or melted coconut oil)
- ½ cup raspberry or cherry jam
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a large bowl, whisk together the flour, cocoa, baking powder, baking soda, and salt until well-combined.
- In a separate bowl, beat the eggs and sugar together until smooth. Add the oil and buttermilk, and mix until well blended.
- Gradually incorporate the dry ingredients into the wet mixture, stirring gently until just combined.
- Fill each cupcake liner about halfway with batter. Spoon a teaspoon of the jam into the center of each.
- Top with more batter, filling almost to the top to keep the jam enclosed.
- Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool completely before frosting with buttercream.
