Description

Ingredients

  • ½ cup buttermilk (or dairy-free milk)
  • ½ cup vegetable oil (or melted coconut oil)
  • ½ cup raspberry or cherry jam

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, cocoa, baking powder, baking soda, and salt until well-combined.
  3. In a separate bowl, beat the eggs and sugar together until smooth. Add the oil and buttermilk, and mix until well blended.
  4. Gradually incorporate the dry ingredients into the wet mixture, stirring gently until just combined.
  5. Fill each cupcake liner about halfway with batter. Spoon a teaspoon of the jam into the center of each.
  6. Top with more batter, filling almost to the top to keep the jam enclosed.
  7. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool completely before frosting with buttercream.
