Description

Ingredients

  • 1 cup whole roasted hazelnuts
  • 1 cup dark or semi-sweet chocolate chunks
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If hazelnuts are not roasted, roast them on a baking sheet for about 10 minutes. Let cool and chop roughly.
  3. Cream together the butter, granulated sugar, and brown sugar until fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. In a separate bowl, whisk together the flour and baking soda.
  6. Gently incorporate the flour mixture into the wet mixture, mixing just until combined.
  7. Fold in the chopped hazelnuts and chocolate chunks.
  8. Drop mounds of dough onto a lined baking sheet, leaving space between them.
  9. Bake for 10-12 minutes until edges are golden and centers are soft.
  10. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a dairy-free version, substitute butter with coconut oil. You can also use gluten-free flour for those with gluten sensitivity.
