- 1 cup whole roasted hazelnuts
- 1 cup dark or semi-sweet chocolate chunks
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- If hazelnuts are not roasted, roast them on a baking sheet for about 10 minutes. Let cool and chop roughly.
- Cream together the butter, granulated sugar, and brown sugar until fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour and baking soda.
- Gently incorporate the flour mixture into the wet mixture, mixing just until combined.
- Fold in the chopped hazelnuts and chocolate chunks.
- Drop mounds of dough onto a lined baking sheet, leaving space between them.
- Bake for 10-12 minutes until edges are golden and centers are soft.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a dairy-free version, substitute butter with coconut oil. You can also use gluten-free flour for those with gluten sensitivity.
