Description

Ingredients

  • 8 oz dark chocolate (70% cocoa or higher)
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 cup hazelnuts (roasted)
  • Cocoa powder (for coating)

Instructions

  1. Chop the chocolate and place in a heatproof bowl.
  2. In a saucepan, warm the heavy cream over medium heat until it simmers.
  3. Pour the hot cream over the chopped chocolate and let it sit for a few minutes.
  4. Gently stir the mixture until smooth, then add butter and vanilla, mixing until incorporated.
  5. Cover with plastic wrap and refrigerate for about 2 hours until firm.
  6. Scoop and roll into small balls with hands.
  7. Coat truffles in cocoa powder or chopped hazelnuts.
  8. Chill again for 30 minutes to set.
  9. Serve and enjoy or package as a gift.

Notes

For a dairy-free version, substitute heavy cream with full-fat coconut milk and butter with coconut oil. Be patient during cooling to avoid truffles losing shape.
