- 8 oz dark chocolate (70% cocoa or higher)
- 1/2 cup heavy cream
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- 1 cup hazelnuts (roasted)
- Cocoa powder (for coating)
Instructions
- Chop the chocolate and place in a heatproof bowl.
- In a saucepan, warm the heavy cream over medium heat until it simmers.
- Pour the hot cream over the chopped chocolate and let it sit for a few minutes.
- Gently stir the mixture until smooth, then add butter and vanilla, mixing until incorporated.
- Cover with plastic wrap and refrigerate for about 2 hours until firm.
- Scoop and roll into small balls with hands.
- Coat truffles in cocoa powder or chopped hazelnuts.
- Chill again for 30 minutes to set.
- Serve and enjoy or package as a gift.
Notes
For a dairy-free version, substitute heavy cream with full-fat coconut milk and butter with coconut oil. Be patient during cooling to avoid truffles losing shape.
