- 12 small tortilla cups
- 1 cup bell peppers, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp oregano
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté diced onions and garlic in olive oil until translucent.
- Add the ground turkey, breaking it up and cooking until browned.
- Stir in diced bell peppers and spices, cook until peppers are softened.
- Fold in tomato sauce and simmer for 5 minutes.
- Spoon the mixture into tortilla cups, filling each generously.
- Sprinkle shredded cheddar on top.
- Bake for 10-15 minutes or until cheese is bubbly and golden.
- Cool slightly before serving; best enjoyed warm!
