- 2 ripe bananas, mashed

- 1/4 cup honey (or maple syrup)

- 1 cup fresh or frozen berries (optional)
- 1/2 cup nuts or seeds (optional)
- 1/4 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease them.
- In a large bowl, mash the ripe bananas until creamy. Add the yogurt (or nut butter) and eggs, blending until smooth.
- In another bowl, whisk together the flour, oats, baking powder, baking soda, and spices.
- Gradually mix the dry ingredients into the wet ingredients using a spatula or wooden spoon, being careful not to overmix.
- Fold in any add-ins like berries, nuts, or chocolate chips.
- Scoop the batter into your prepared muffin tins, filling them about three-quarters full.
- Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 5 minutes before transferring to a wire rack.
- Enjoy warm or at room temperature.
Notes
Use ripe, spotty bananas for the best sweetness and moisture. Adjust flour measuring by spooning and leveling off.
