Ingredients

  • 1 lb boneless chicken breast or thighs, diced
  • 1 cup brown rice
  • 1 cup cremini or shiitake mushrooms, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup spinach, chopped
  • 1 cup bell peppers, chopped
  • 1 cup broccoli florets
  • 2 cups chicken broth
  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp fresh thyme
  • 1 tsp fresh parsley
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the brown rice according to package instructions.
  3. In a skillet, heat olive oil and sauté onions and garlic until translucent.
  4. Add diced chicken, season with salt, pepper, and herbs; cook until browned.
  5. Stir in mushrooms and vegetables, cooking for an additional 3-4 minutes.
  6. In a large bowl, mix the cooked rice, sautéed chicken and veggies, broth, Greek yogurt, and lemon juice.
  7. Transfer the mixture to a greased casserole dish.
  8. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 10-15 minutes until golden.
  9. Let rest for a few minutes before serving, topped with fresh herbs.

Notes

Feel free to substitute chicken with quinoa or use shredded rotisserie chicken for convenience.
