Description
A comforting dish combining tender beef with hearty noodles in a rich broth, perfect for family gatherings.
Ingredients
Scale
- 2 pounds chuck roast or stew meat
- 1 tablespoon olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 4 cups beef broth
- 8 ounces wide egg noodles
- 2 cups carrots, sliced
- 1 cup peas
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Sear the beef: In a large pot, heat olive oil over medium-high heat. Add beef, seasoning it with salt and pepper. Sear until browned on all sides.
- Remove the beef and set it aside. In the same pot, toss in diced onions and minced garlic; cook until softened and fragrant—about 5 minutes.
- Add back the beef: Return the beef to the pot, pouring in the beef broth. Bring to a boil, then reduce to a simmer.
- Introduce the noodles: After about 45 minutes of simmering the beef, add noodles and any vegetables. Cook until noodles are al dente and beef is tender—additional 10-15 minutes.
- Taste and adjust seasoning before serving, adding more salt, pepper, or herbs as desired.
- Serve with a smile, garnishing with fresh herbs or cheese if desired.
Notes
For a lighter option, you can substitute the beef with lean ground beef or mushrooms with vegetable broth for a vegetarian dish. Patience is key for a flavorful broth.
