- 1 lb ground meat (beef, sausage, or turkey)
- 8 oz lasagna noodles (broken into pieces)
- 28 oz crushed tomatoes or tomato sauce
- 4 cups chicken or vegetable broth
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried thyme
- 2 cups fresh spinach or kale
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onions, carrots, and celery. Sauté until softened, about 5–7 minutes.
- Stir in minced garlic, and sauté for an additional minute until fragrant.
- Add ground meat, season with salt and pepper, and cook until browned.
- Pour in crushed tomatoes and broth, bringing it to a gentle simmer.
- Add broken lasagna noodles, cover, and cook until the noodles are tender, around 10–12 minutes.
- Stir in ricotta and fresh spinach, letting the spinach wilt into the soup.
- Adjust seasoning, adding fresh herbs and any additional spices you desire.
- Serve hot, garnished with melted mozzarella and freshly grated Parmesan on top.
