Instructions

  1. Prep the ingredients: Trim excess fat from beef tips and cut into smaller chunks. Chop onions, garlic, and other vegetables.
  2. Sear the beef: In a skillet over medium-high heat, add oil and sear the beef in batches until golden brown.
  3. Deglaze the pan: Add minced garlic to the skillet and sauté for an additional minute. Then deglaze with a bit of beef broth.
  4. Combine in the crock pot: Transfer the seared beef and pan juices to the crock pot, then add vegetables, remaining broth, Worcestershire sauce, and spices.
  5. Cook slowly: Set the crock pot on low for 6-8 hours or high for 3-4 hours.
  6. Thicken the gravy: About 30 minutes before serving, mix flour or cornstarch with cold water and stir it into the gravy.
