- 1 lb (450g) ground beef
- 4 medium-sized Yukon Gold potatoes, chopped
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream or evaporated milk
- 1 cup diced carrots
- 1 cup celery, diced
- 1 cup frozen corn
- 2 tsp fresh thyme or parsley, chopped
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet, breaking it up until nicely cooked. Drain excess fat.
- Transfer the cooked beef to the crockpot, then add chopped potatoes, diced onions, garlic, and any additional vegetables.
- Pour in the beef broth until it just covers the veggies. Season with salt, pepper, and herbs.
- Cook on low for 360-480 minutes or on high for 240-300 minutes until the potatoes are tender.
- Stir in the cream or evaporated milk 30 minutes before serving to thicken the soup.
- Serve hot and enjoy with crusty bread or a fresh salad.
Notes
For variations, you can use ground turkey instead of beef or replace potatoes with diced sweet potatoes for a sweeter flavor.
