Ingredients

  • 1 lb (450g) ground beef
  • 4 medium-sized Yukon Gold potatoes, chopped
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream or evaporated milk
  • 1 cup diced carrots
  • 1 cup celery, diced
  • 1 cup frozen corn
  • 2 tsp fresh thyme or parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet, breaking it up until nicely cooked. Drain excess fat.
  2. Transfer the cooked beef to the crockpot, then add chopped potatoes, diced onions, garlic, and any additional vegetables.
  3. Pour in the beef broth until it just covers the veggies. Season with salt, pepper, and herbs.
  4. Cook on low for 360-480 minutes or on high for 240-300 minutes until the potatoes are tender.
  5. Stir in the cream or evaporated milk 30 minutes before serving to thicken the soup.
  6. Serve hot and enjoy with crusty bread or a fresh salad.

Notes

For variations, you can use ground turkey instead of beef or replace potatoes with diced sweet potatoes for a sweeter flavor.
