Instructions
- Heat a large pot over medium heat and add olive oil. Once hot, toss in chopped onions and sauté until they turn golden brown.
- Stir in minced garlic and sliced mushrooms, cooking until the mushrooms soften and their juices begin to release.
- Add chopped potatoes, carrots, and parsnips to the pot. Sauté for a few minutes, allowing the vegetables to mingle with the garlic and onions.
- Cover the sautéed vegetables with vegetable broth, bringing the mixture to a gentle boil.
- Sprinkle in thyme, salt, and pepper, letting the flavors develop. Reduce the heat, cover the pot, and let it simmer for about 30-40 minutes.
- Add frozen peas in the last few minutes for sweetness and color.
- Taste and adjust seasonings if needed. A squeeze of lemon or a splash of vinegar can brighten the stew beautifully.
