Instructions

  1. Heat a large pot over medium heat and add olive oil. Once hot, toss in chopped onions and sauté until they turn golden brown.
  2. Stir in minced garlic and sliced mushrooms, cooking until the mushrooms soften and their juices begin to release.
  3. Add chopped potatoes, carrots, and parsnips to the pot. Sauté for a few minutes, allowing the vegetables to mingle with the garlic and onions.
  4. Cover the sautéed vegetables with vegetable broth, bringing the mixture to a gentle boil.
  5. Sprinkle in thyme, salt, and pepper, letting the flavors develop. Reduce the heat, cover the pot, and let it simmer for about 30-40 minutes.
  6. Add frozen peas in the last few minutes for sweetness and color.
