- Fresh or dried rosemary, to taste
- Fresh or dried parsley, to taste

Instructions
- Prepare your ingredients: Wash lentils and chop onion, garlic, carrots, and celery.
- Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery; sauté until softened, about 5-7 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
- Add the rinsed lentils and canned tomatoes; stir well to combine.
- Pour in the broth and bring to a gentle boil.
- Season with thyme, rosemary, parsley, salt, and pepper to taste.
- Reduce heat to low, cover, and let simmer for 30-35 minutes, stirring occasionally.
- Finish with fresh herbs and adjust seasoning as needed before serving.
- Serve in bowls, drizzled with olive oil and a squeeze of lemon, accompanied by crusty bread.
