Ingredients

  • 1 lb Italian or Chorizo sausage
  • 2 medium sweet potatoes, cubed
  • 2 cups kale, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable or chicken broth
  • 2 bay leaves
  • 1 tsp dried thyme or rosemary
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat and add olive oil.
  2. Sauté diced onions until translucent, about 3–4 minutes. Add minced garlic and sauté for another minute.
  3. Add the sausage and brown well, breaking it up with a spoon.
  4. Stir in sweet potatoes, carrots, and celery; sauté for 2–3 minutes.
  5. Pour in broth, add bay leaves and herbs; bring to a gentle boil, then reduce to a simmer for 20–25 minutes or until sweet potatoes are tender.
  6. Add kale and cook for an additional 5 minutes.
  7. Season with salt and pepper, remove bay leaves, and let the soup sit for a few minutes before serving.

Notes

For a vegetarian option, substitute sausage with a meat alternative or omit it, and add beans for protein.
