Ingredients

- 1 lb Italian or Chorizo sausage
- 2 medium sweet potatoes, cubed
- 2 cups kale, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable or chicken broth
- 2 bay leaves
- 1 tsp dried thyme or rosemary
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat and add olive oil.
- Sauté diced onions until translucent, about 3–4 minutes. Add minced garlic and sauté for another minute.
- Add the sausage and brown well, breaking it up with a spoon.
- Stir in sweet potatoes, carrots, and celery; sauté for 2–3 minutes.
- Pour in broth, add bay leaves and herbs; bring to a gentle boil, then reduce to a simmer for 20–25 minutes or until sweet potatoes are tender.
- Add kale and cook for an additional 5 minutes.
- Season with salt and pepper, remove bay leaves, and let the soup sit for a few minutes before serving.
Notes
For a vegetarian option, substitute sausage with a meat alternative or omit it, and add beans for protein.
