- Fresh Cilantro or Parsley, for garnish
Instructions
- Sauté the onions in olive oil over medium heat until translucent, about 3-4 minutes. Add garlic and cook for another minute.
- Add the carrots and celery; cook for 5 minutes. Then, stir in the bell peppers and zucchini.
- Incorporate the drained beans and stir in the tomato paste.
- Season with chili powder, cumin, and smoked paprika.
- Pour in the vegetable broth, bring to a simmer, and cook for about 30 minutes.
- Taste and adjust seasoning before serving.
- Garnish with fresh herbs and serve hot.
