Ingredients

Scale
  • 1 lb beef (flank steak or sirloin), thinly sliced
  • 1/3 cup hoisin sauce
  • 8 oz noodles (egg, udon, or rice)
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 bell pepper, sliced
  • 1 cup snap peas
  • 3 green onions, chopped
  • 1 cup beef or vegetable broth

Instructions

  1. Marinate the beef in hoisin sauce, minced garlic, and grated ginger for at least 30 minutes.
  2. Cook the noodles according to package directions, drain, and toss with sesame oil.
  3. In a skillet or wok, heat oil and sauté bell peppers, snap peas, and green onions until tender, about 3-5 minutes.
  4. Push the vegetables to one side and add the marinated beef, cooking until browned, about 2-3 minutes.
  5. Combine the noodles with the sautéed vegetables and beef, adding broth as needed to create a sauce.
  6. Garnish with fresh scallions and cilantro before serving. Serve hot.

Notes

For a lighter dish, use whole wheat or zucchini noodles. Store leftovers in an airtight container for up to three days.
