- 1 lb beef (flank steak or sirloin), thinly sliced
- 1/3 cup hoisin sauce
- 8 oz noodles (egg, udon, or rice)
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 bell pepper, sliced
- 1 cup snap peas
- 3 green onions, chopped
- 1 cup beef or vegetable broth
- Fresh herbs (scallions and cilantro) for garnish
- 1 tbsp sesame oil
Instructions
- Marinate the beef in hoisin sauce, minced garlic, and grated ginger for at least 30 minutes.
- Cook the noodles according to package directions, drain, and toss with sesame oil.
- In a skillet or wok, heat oil and sauté bell peppers, snap peas, and green onions until tender, about 3-5 minutes.
- Push the vegetables to one side and add the marinated beef, cooking until browned, about 2-3 minutes.
- Combine the noodles with the sautéed vegetables and beef, adding broth as needed to create a sauce.
- Garnish with fresh scallions and cilantro before serving. Serve hot.
Notes
For a lighter dish, use whole wheat or zucchini noodles. Store leftovers in an airtight container for up to three days.
