Ingredients

- 1 lb fresh green beans, trimmed
- 1 cup feta cheese, crumbled
- 1 cup dried cranberries
- 1 cup walnuts, toasted
- 3 tbsp extra virgin olive oil
- 2 cloves garlic, minced
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper, to taste
Instructions
- Prep the green beans: Trim the ends and wash thoroughly. Bring pot of salted water to a boil.
- Blanch the beans: Add them to boiling water for 3-4 minutes until bright green and crisp-tender. Transfer to an ice water bath.
- Toast the walnuts: In a skillet over medium heat, toast walnuts for 5 minutes until golden and fragrant.
- Make the dressing: Whisk together olive oil, garlic, and lemon juice. Season with salt and pepper.
- Assemble the salad: In a large bowl, combine green beans, walnuts, cranberries, and feta. Drizzle dressing over and toss gently.
- Serve chilled: Let sit for 10 minutes before serving, can be served at room temperature or chilled.
Notes
For a firmer texture, blanch green beans for a shorter time. This salad is best enjoyed fresh.
