Ingredients

  • 1 cup feta cheese, crumbled
  • 1 cup dried cranberries
  • 1 cup walnuts, toasted
  • 3 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper, to taste

Instructions

  1. Prep the green beans: Trim the ends and wash thoroughly. Bring pot of salted water to a boil.
  2. Blanch the beans: Add them to boiling water for 3-4 minutes until bright green and crisp-tender. Transfer to an ice water bath.
  3. Toast the walnuts: In a skillet over medium heat, toast walnuts for 5 minutes until golden and fragrant.
  4. Make the dressing: Whisk together olive oil, garlic, and lemon juice. Season with salt and pepper.
  5. Assemble the salad: In a large bowl, combine green beans, walnuts, cranberries, and feta. Drizzle dressing over and toss gently.
  6. Serve chilled: Let sit for 10 minutes before serving, can be served at room temperature or chilled.

Notes

For a firmer texture, blanch green beans for a shorter time. This salad is best enjoyed fresh.
