Ingredients

Instructions

  1. Prep the green beans by rinsing them under cold water and trimming the ends.
  2. Blanch the green beans in boiling salted water for 3-4 minutes until bright green, then plunge into ice water.
  3. Toast the walnuts in a dry skillet over medium heat for 3-5 minutes until golden.
  4. Combine the blanched green beans, toasted walnuts, feta, and cranberries in a large bowl.
  5. Dress the salad with olive oil, lemon juice, salt, and pepper, then toss gently.
