- 6 cups apples (mix of Granny Smith and Fuji)
- ¼ cup granulated sugar
- ¼ cup brown sugar
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 cup unsalted butter
- 2 ½ cups all-purpose flour
- 1 teaspoon salt
- Ice water
- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
- Sugar (for sprinkling on top)
Instructions
- Prepare the apples: Peel, core, and slice the apples. Toss with sugars, cinnamon, nutmeg, and lemon juice. Set aside.
- Make the pie crust: Combine flour and salt, cut in butter, then add ice water until dough holds together. Chill for at least an hour.
- Preheat oven to 425°F (220°C). Roll out one dough disc and fill it with the apple mixture, dotting with butter.
- Cover with second rolled dough disc, crimp edges, and cut slits for steam to escape.
- Brush with egg wash, sprinkle sugar, and bake for 15 minutes, then reduce temperature to 350°F (175°C) and bake for an additional 35-45 minutes.
- Cool for 2 hours before serving.
Notes
For best results, chill ingredients and allow pie to cool to set properly.
