Ingredients

  • 6 cups apples (mix of Granny Smith and Fuji)
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 cup unsalted butter
  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • Ice water
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • Sugar (for sprinkling on top)

Instructions

  1. Prepare the apples: Peel, core, and slice the apples. Toss with sugars, cinnamon, nutmeg, and lemon juice. Set aside.
  2. Make the pie crust: Combine flour and salt, cut in butter, then add ice water until dough holds together. Chill for at least an hour.
  3. Preheat oven to 425°F (220°C). Roll out one dough disc and fill it with the apple mixture, dotting with butter.
  4. Cover with second rolled dough disc, crimp edges, and cut slits for steam to escape.
  5. Brush with egg wash, sprinkle sugar, and bake for 15 minutes, then reduce temperature to 350°F (175°C) and bake for an additional 35-45 minutes.
  6. Cool for 2 hours before serving.

Notes

For best results, chill ingredients and allow pie to cool to set properly.
