A classic pie that combines sweet and tart apples with warm spices, perfect for family gatherings and comforting moments.

- 6–8 cups mixed apples (such as Granny Smith and Honeycrisp)
- 3/4 cup granulated sugar (or brown sugar)
- 2 1/2 cups all-purpose flour
- 1 cup cold unsalted butter, cubed
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1 tbsp lemon juice
Instructions
- Peel, core, and slice the apples. Toss them with sugar, cinnamon, nutmeg, and lemon juice in a bowl. Let sit for 15-20 minutes.
- Make the pie crust by blending flour and salt, cutting in cold butter, and adding ice water until dough forms. Chill for at least an hour.
- Roll out one disc of dough into a 12-inch circle and place it in a pie dish.
- Pour the apple filling into the crust and dot with butter.
- Roll out the second disc of dough and place it over the filling, cutting slits for steam or creating a lattice pattern. Crimp the edges.
- Brush the crust with egg wash and bake at 425°F (220°C) for 15 minutes, then lower to 350°F (175°C) and bake for 30-40 minutes.
- Allow cooling before slicing.
Notes
For a twist, try adding a splash of vanilla or other spices like ginger or allspice.
