  • 4 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup plain yogurt
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp garam masala
  • 1 tsp chili powder
  • 4 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 onion, finely chopped
  • Fresh cilantro, for garnish

Instructions

  1. Marinate the chicken: In a bowl, combine yogurt with garlic, ginger, cumin, coriander, and chili powder. Add the chicken, coating it well, and let it marinate for at least 30 minutes or up to overnight in the fridge.
  2. Cook the chicken: Heat butter in a skillet over medium heat. Add the marinated chicken and sauté until browned and cooked through, about 6-8 minutes. Set it aside.
  3. Cook the aromatics: In the same skillet, add more butter if necessary, and sauté finely chopped onions until soft and golden. Stir in garlic and ginger and sauté until fragrant.
  4. Create the sauce: Stir in the crushed tomatoes and cook for about 10 minutes. Add heavy cream and the cooked chicken, letting everything simmer together.
  5. Finish with spices: Sprinkle in the garam masala and a pinch of sugar to balance the acidity of the tomatoes. Adjust seasoning as necessary.
  6. Garnish and serve: Garnish with fresh cilantro before serving. Pair it with naan or basmati rice.
