- 2 cups granulated sugar
- 1 cup corn syrup
- 1 cup water
- 1 tsp peppermint extract
- Red gel food coloring
- Powdered sugar for dusting
Instructions
- Combine the granulated sugar, corn syrup, and water in a heavy-bottom saucepan.
- Cook the mixture over medium heat, stirring constantly, until it reaches 240°F (soft-ball stage).
- Add the peppermint extract and a few drops of food coloring, stirring quickly.
- Cool the mixture in the pan for about five minutes.
- Pour it onto a powdered sugar-dusted surface and knead into a dough.
- Roll the dough into long ropes about half an inch in diameter.
- Cut them into 4-inch pieces and shape ends into sticks.
- Let the sticks cool fully at room temperature.
- Dust with powdered sugar and store in an airtight container.
Notes
Using a candy thermometer is essential to reach the right temperature. Dusting with powdered sugar prevents the sticks from sticking together.
