Ingredients

  • 2 cups granulated sugar
  • 1 cup corn syrup
  • 1 cup water
  • 1 tsp peppermint extract
  • Red gel food coloring
  • Powdered sugar for dusting

Instructions

  1. Combine the granulated sugar, corn syrup, and water in a heavy-bottom saucepan.
  2. Cook the mixture over medium heat, stirring constantly, until it reaches 240°F (soft-ball stage).
  3. Add the peppermint extract and a few drops of food coloring, stirring quickly.
  4. Cool the mixture in the pan for about five minutes.
  5. Pour it onto a powdered sugar-dusted surface and knead into a dough.
  6. Roll the dough into long ropes about half an inch in diameter.
  7. Cut them into 4-inch pieces and shape ends into sticks.
  8. Let the sticks cool fully at room temperature.
  9. Dust with powdered sugar and store in an airtight container.

Notes

Using a candy thermometer is essential to reach the right temperature. Dusting with powdered sugar prevents the sticks from sticking together.
