Ingredients

  • 1 lb boneless skinless chicken thighs or breasts
  • 1 cup buttermilk (or milk mixed with plain yogurt)
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Dried herbs (oregano, thyme, etc.) to taste
  • 2 eggs
  • Oil for frying

Instructions

  1. Cut the chicken into bite-sized pieces and marinate in buttermilk with salt and pepper for at least 1 hour.
  2. Mix breadcrumbs with garlic powder, onion powder, paprika, and dried herbs.
  3. Set up a breading station. Dip marinated chicken in breadcrumbs, coating well.
  4. Heat oil in a skillet over medium-high heat. Test with a piece of bread to check readiness.
  5. Fry chicken nuggets in batches until golden brown and crispy, around 3-4 minutes per side.
  6. Transfer to paper towels to drain excess oil and serve hot with dipping sauces.
