  1. Prepare the filling: In a mixing bowl, combine the unsweetened cocoa powder, powdered sugar, heavy cream, butter, and peppermint extract. Mix until a smooth, pliable dough forms.
  2. Shape the patties: Dust your hands with powdered sugar to prevent sticking. Take small amounts of the filling and roll them into bite-sized disks. Place them on a parchment-lined baking sheet.
  3. Chill the disks: Pop these disks in the freezer for about 30 minutes.
  4. Melt the chocolate: While the disks are chilling, melt your chocolate chips using a microwave or double boiler method. Stir until smooth and glossy.
