Instructions
- Prepare the filling: In a mixing bowl, combine the unsweetened cocoa powder, powdered sugar, heavy cream, butter, and peppermint extract. Mix until a smooth, pliable dough forms.
- Shape the patties: Dust your hands with powdered sugar to prevent sticking. Take small amounts of the filling and roll them into bite-sized disks. Place them on a parchment-lined baking sheet.
- Chill the disks: Pop these disks in the freezer for about 30 minutes.
- Melt the chocolate: While the disks are chilling, melt your chocolate chips using a microwave or double boiler method. Stir until smooth and glossy.
- Coat the patties: Remove the mint disks from the freezer. Using a fork, dip each disk into the melted chocolate, allowing any excess to drip off. Return them to the baking sheet.
- Let them set: Place the coated patties in the refrigerator for about 20 minutes, or until the chocolate hardens completely.
