Description

A nostalgic and delicious Honey Bun Cake with a rich, buttery flavor and a delightful cinnamon-sugar swirl.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk (buttermilk preferred)
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar
  • 1 ½ cups powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy (3 to 5 minutes).
  3. Add eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together flour, baking powder, and cinnamon.
  5. Gradually add the dry ingredients into the creamed mixture, alternating with milk, starting and ending with dry ingredients.
  6. In a small bowl, combine brown sugar and cinnamon for the swirl.
  7. Pour half the batter into the pan, sprinkle half of the cinnamon-brown sugar mixture over it, pour the remaining batter, and finish with the remaining cinnamon-sugar mix. Swirl gently with a knife.
  8. Bake for 30-35 minutes, until a toothpick comes out clean.
  9. While the cake cools, whisk together powdered sugar, milk, and vanilla for the glaze.
  10. Drizzle the glaze over the warm cake and let it soak in before serving.

Notes

For a dairy-free version, substitute coconut oil or plant-based butter. For a vegan option, use flax eggs.
