- 4 cups fresh corn kernels (or 2 cans creamed corn)
- 1/3 cup honey
- 1 cup cream (or sour cream)
- 2 cloves garlic, minced (or 1/2 teaspoon garlic powder)
- 2 large eggs
- 4 tablespoons butter, divided
- 1 tablespoon fresh thyme or parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch casserole dish with 1 tablespoon of butter.
- In a skillet, melt another tablespoon of butter and add minced garlic. Sauté until fragrant, about 1-2 minutes. Set aside.
- In a mixing bowl, combine corn, honey, cream, eggs, sautéed garlic, and chopped herbs. Season with salt and pepper.
- Pour the mixture into the prepared dish and dot the top with remaining butter.
- Bake for 35-40 minutes until golden brown and set in the center.
- Let it cool slightly before serving.
Notes
Use fresh ingredients for the best flavor. For a crunchier top, consider adding a sprinkle of breadcrumbs before baking. This casserole can be served alongside various proteins.
