Ingredients

  • 2 lbs carrots, peeled and cut into sticks
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • Black pepper, to taste
  • 1 to 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the carrots, cutting them into even-sized sticks (about 2 to 3 inches long).
  3. In a mixing bowl, combine the honey, olive oil, salt, and black pepper. Mix well until combined.
  4. Add the carrots to the bowl and stir gently to coat them in the honey mixture.
  5. Spread the coated carrots in a single layer on a parchment-lined baking sheet.
  6. Sprinkle fresh thyme leaves over the carrots.
  7. Roast in the preheated oven for 20-25 minutes, or until tender and caramelized, stirring halfway through cooking.
  8. Remove from the oven and garnish with a sprinkle of coarse sea salt. Enjoy warm!
