- 2 lbs carrots, peeled and cut into sticks
- 2 tablespoons honey
- 2 tablespoons olive oil
- 1 teaspoon salt
- Black pepper, to taste
- 1 to 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and peel the carrots, cutting them into even-sized sticks (about 2 to 3 inches long).
- In a mixing bowl, combine the honey, olive oil, salt, and black pepper. Mix well until combined.
- Add the carrots to the bowl and stir gently to coat them in the honey mixture.
- Spread the coated carrots in a single layer on a parchment-lined baking sheet.
- Sprinkle fresh thyme leaves over the carrots.
- Roast in the preheated oven for 20-25 minutes, or until tender and caramelized, stirring halfway through cooking.
- Remove from the oven and garnish with a sprinkle of coarse sea salt. Enjoy warm!
