Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 2 tablespoons Hungarian paprika
  • 2 large yellow onions, chopped
  • 4 cloves garlic, minced
  • 2 carrots, sliced
  • 2 bell peppers, chopped
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 2 bay leaves
  • 1 teaspoon caraway seeds
  • Salt and pepper, to taste
  • Oil for sautéing

Instructions

  1. Heat oil in a heavy-bottomed pot over medium heat. Sauté onions until translucent.
  2. Add beef chunks and sear until browned on all sides.
  3. Stir in minced garlic, paprika, and caraway seeds; cook for another minute.
  4. Incorporate tomato paste and beef broth, scraping up browned bits from the pot.
  5. Add carrots and bell peppers, then toss to combine.
  6. Add bay leaves and bring to a gentle simmer; cover pot and cook for 1.5 to 2 hours on low heat.
  7. Taste and season with salt and pepper before serving. Remove bay leaves before serving warm.

Notes

For a thicker sauce, remove the lid during the last 30 minutes of cooking.
