- 2 lbs beef chuck, cut into chunks
- 2 tablespoons Hungarian paprika
- 2 large yellow onions, chopped
- 4 cloves garlic, minced
- 2 carrots, sliced
- 2 bell peppers, chopped
- 2 tablespoons tomato paste
- 4 cups beef broth
- 2 bay leaves
- 1 teaspoon caraway seeds
- Salt and pepper, to taste
- Oil for sautéing
Instructions
- Heat oil in a heavy-bottomed pot over medium heat. Sauté onions until translucent.
- Add beef chunks and sear until browned on all sides.
- Stir in minced garlic, paprika, and caraway seeds; cook for another minute.
- Incorporate tomato paste and beef broth, scraping up browned bits from the pot.
- Add carrots and bell peppers, then toss to combine.
- Add bay leaves and bring to a gentle simmer; cover pot and cook for 1.5 to 2 hours on low heat.
- Taste and season with salt and pepper before serving. Remove bay leaves before serving warm.
Notes
For a thicker sauce, remove the lid during the last 30 minutes of cooking.
