- 2 cups heavy whipping cream
- 1 cup freshly brewed coffee
- 6 egg yolks
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- Preheat your oven to 325°F (160°C).
- In a saucepan, heat the heavy cream and coffee over medium-low heat until simmering.
- In a bowl, whisk the egg yolks, granulated sugar, and salt until smooth.
- Gradually pour the warm cream mixture into the egg mixture while whisking constantly.
- Stir in the vanilla extract.
- Strain the mixture through a fine mesh sieve into another bowl.
- Pour the custard into ramekins and place them in a baking dish filled with hot water halfway up the ramekins.
- Bake for 30 to 40 minutes until the edges are set but the center jiggles slightly.
- Cool and refrigerate for at least 2 hours to set.
- Sprinkle sugar on top and caramelize using a kitchen torch or broiler.
Notes
Serve with whipped cream or fresh raspberries for contrast. Store leftovers in the fridge without caramelizing the sugar until ready to enjoy.
