Ingredients

  • 1 cup Greek yogurt (non-fat or full-fat)
  • 1 cup almond flour (or all-purpose flour)
  • 2 large eggs
  • 1/2 cup natural sweetener (monk fruit or erythritol)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8 inch baking pan with parchment paper and lightly grease it.
  3. In a large bowl, combine the almond flour, cocoa powder, baking powder, and salt.
  4. In another bowl, mix the Greek yogurt, eggs, vanilla extract, and natural sweetener until combined.
  5. Pour the wet ingredients into the dry ingredients and gently fold until just combined.
  6. Transfer the batter into the prepared baking pan and smooth the top.
  7. Bake for 25–30 minutes or until a toothpick comes out with a few moist crumbs.
  8. Allow to cool in the pan for 10 minutes, then lift out and cool completely before slicing.
  9. Optional: Serve with Greek yogurt and berries on top.

Avoid overmixing for tender brownies. Use room temperature ingredients for better mixing.
