Ingredients

  • 1 Butternut squash, peeled and cubed
  • 2 cups Fresh spinach
  • 2 cups Cremini or shiitake mushrooms, sliced
  • 12 Lasagna noodles
  • 2 cups Mozzarella cheese, shredded
  • 1 cup Ricotta cheese
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • Salt and pepper, to taste
  • Pinch of red pepper flakes
  • Oregano and thyme, for sprinkling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the garlic in olive oil, then add mushrooms and spinach.
  3. Prepare the butternut squash by roasting it until tender, then blend with olive oil, nutmeg, salt, and pepper.
  4. Assemble the lasagna in a baking dish with layers of noodles, mushroom-spinach mixture, ricotta, mozzarella, and butternut squash puree.
  5. Bake covered with foil for 20 minutes, then uncovered for an additional 15-20 minutes until bubbly.
  6. Let the lasagna rest for 10-15 minutes before slicing.
  7. Garnish with fresh basil or parsley before serving.
