Ingredients

- 1 Butternut squash, peeled and cubed
- 2 cups Fresh spinach
- 2 cups Cremini or shiitake mushrooms, sliced
- 12 Lasagna noodles
- 2 cups Mozzarella cheese, shredded
- 1 cup Ricotta cheese
- 2 tablespoons Olive oil
- 2 cloves Garlic, minced
- Salt and pepper, to taste
- Pinch of red pepper flakes
- Oregano and thyme, for sprinkling
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté the garlic in olive oil, then add mushrooms and spinach.
- Prepare the butternut squash by roasting it until tender, then blend with olive oil, nutmeg, salt, and pepper.
- Assemble the lasagna in a baking dish with layers of noodles, mushroom-spinach mixture, ricotta, mozzarella, and butternut squash puree.
- Bake covered with foil for 20 minutes, then uncovered for an additional 15-20 minutes until bubbly.
- Let the lasagna rest for 10-15 minutes before slicing.
- Garnish with fresh basil or parsley before serving.
