  • 4 medium potatoes, peeled and diced
  • 4 cups green cabbage, chopped
  • 1 sweet yellow onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 teaspoon fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients: Start by dicing the Irish bacon, potatoes, and onions. Chop the cabbage into bite-sized pieces.
  2. Sauté the bacon: In a large pot over medium heat, sauté the bacon until crispy.
  3. Add the diced onion and sauté until it’s translucent. Introduce minced garlic and cook for another minute.
  4. Toss in the potatoes and cabbage, stirring to coat in the bacon fat.
  5. Pour in the broth, season with salt and pepper, and add the bay leaf and thyme. Bring everything to a boil, then reduce the heat.
  6. Simmer uncovered for about 20-25 minutes until the potatoes are tender.
  7. Final touches: Use a potato masher to lightly mash some of the potatoes for a creamy texture. Serve hot, garnished with fresh herbs like parsley.

Notes
