- 12 oz Fusilli or Bowtie Pasta
- 1 pint Cherry Tomatoes, halved
- 8 oz Fresh Mozzarella Balls
- 1/2 cup Fresh Basil Leaves
- 1/2 cup Sour Cream
- 1/4 cup Mayonnaise
- 2 tbsp Olive Oil
- 2 cloves Garlic, minced
- Salt, to taste
- Pepper, to taste
- Seasonal Vegetables (optional such as baby spinach or arugula)
Instructions
- Cook the pasta: Begin by boiling a pot of salted water and cooking the pasta according to package directions until al dente. Drain and rinse under cold water to stop the cooking process.
- Prepare the salad base: In a large mixing bowl, combine the cooked pasta, halved cherry tomatoes, and mozzarella. Give it a gentle toss to mix everything.
- Whisk the dressing: In a separate bowl, whisk together sour cream, mayonnaise, olive oil, minced garlic, salt, and pepper. Adjust seasoning as necessary.
- Combine and chill: Pour the dressing over the pasta mixture and fold gently until everything is coated well. Let it chill in the refrigerator for at least 30 minutes before serving.
- Garnish and serve: Just before serving, sprinkle fresh basil leaves on top and drizzle with balsamic glaze if desired.
