Ingredients

  • 1 box Jiffy Corn Muffin Mix
  • 1 can (15 oz) of canned corn, drained
  • 1 cup sour cream
  • 1/2 cup cream
  • 1/4 cup butter, melted
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the Jiffy corn muffin mix and canned corn.
  3. Mix in the sour cream and cream until well combined.
  4. Melt the butter and let cool slightly, then stir it into the mixture.
  5. In a separate bowl, beat the eggs and add them to the mixture.
  6. Stir all ingredients together until just combined.
  7. Pour the mixture into a greased baking dish.
  8. Bake for 45-50 minutes, or until golden brown and a toothpick comes out clean.
  9. Let cool for a few minutes before serving.

Notes

For a lighter version, substitute Greek yogurt for sour cream and milk for half of the cream. Don’t overmix the batter to maintain fluffiness.
