- 1 box Jiffy Corn Muffin Mix
- 1 can (15 oz) of canned corn, drained
- 1 cup sour cream
- 1/2 cup cream
- 1/4 cup butter, melted
- 2 large eggs
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the Jiffy corn muffin mix and canned corn.
- Mix in the sour cream and cream until well combined.
- Melt the butter and let cool slightly, then stir it into the mixture.
- In a separate bowl, beat the eggs and add them to the mixture.
- Stir all ingredients together until just combined.
- Pour the mixture into a greased baking dish.
- Bake for 45-50 minutes, or until golden brown and a toothpick comes out clean.
- Let cool for a few minutes before serving.
Notes
For a lighter version, substitute Greek yogurt for sour cream and milk for half of the cream. Don’t overmix the batter to maintain fluffiness.
