Ingredients

- 1 spaghetti squash
- 1 cup heavy cream
- 1/2 cup gruyère cheese, grated
- 1/2 cup parmesan cheese, grated
- 1 cup fresh mushrooms (cremini or shiitake), chopped
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme or parsley, chopped
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Sprinkle a little olive oil, salt, and pepper on the cut sides for added flavor.
- Place the squash cut-side down on a baking sheet. Roast for about 30-40 minutes or until the flesh is tender.
- Melt butter in a skillet over medium heat.
- Add minced garlic and chopped mushrooms. Sauté until golden, about 5-7 minutes.
- Season with salt, pepper, and thyme.
- Combine heavy cream, gruyère, and parmesan in a mixing bowl. Add sautéed mushrooms.
- Use a fork to scrape out the spaghetti strands into a large bowl. Toss with the creamy mixture.
- Transfer the mixture to a greased baking dish. Top with additional cheese.
- Bake for 20-25 minutes, or until the top is bubbly and golden brown.
- Allow to cool slightly before serving.
- Finish with fresh parsley or thyme.
Notes
For a lighter version, use non-dairy cream and substitute cheeses with mozzarella or gouda.
