Description

Ingredients

  • 1 spaghetti squash
  • 1 cup heavy cream
  • 1/2 cup gruyère cheese, grated
  • 1/2 cup parmesan cheese, grated
  • 1 cup fresh mushrooms (cremini or shiitake), chopped
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme or parsley, chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Sprinkle a little olive oil, salt, and pepper on the cut sides for added flavor.
  4. Place the squash cut-side down on a baking sheet. Roast for about 30-40 minutes or until the flesh is tender.
  5. Melt butter in a skillet over medium heat.
  6. Add minced garlic and chopped mushrooms. Sauté until golden, about 5-7 minutes.
  7. Season with salt, pepper, and thyme.
  8. Combine heavy cream, gruyère, and parmesan in a mixing bowl. Add sautéed mushrooms.
  9. Use a fork to scrape out the spaghetti strands into a large bowl. Toss with the creamy mixture.
  10. Transfer the mixture to a greased baking dish. Top with additional cheese.
  11. Bake for 20-25 minutes, or until the top is bubbly and golden brown.
  12. Allow to cool slightly before serving.
  13. Finish with fresh parsley or thyme.

Notes

For a lighter version, use non-dairy cream and substitute cheeses with mozzarella or gouda.
