Description
These delightful bagels combine the earthy taste of spinach with creamy cottage cheese, creating a satisfying and nostalgic dish perfect for breakfast or brunch.
Ingredients
Scale
- 4 cups all-purpose flour (or whole wheat)
- 1 tablespoon salt
- 2 teaspoons active dry yeast
- 1 and 1/2 cups warm water
- 2 cups fresh spinach, chopped (or frozen, thawed and drained)
- 1 cup cottage cheese (or low-fat/ricotta for lighter version)
- 2 cloves garlic, minced (or 1 teaspoon garlic powder)
- 1 teaspoon black pepper
- 1 tablespoon Italian herbs (oregano or basil)
Instructions
- In a large mixing bowl, combine flour, salt, and yeast. Gradually add warm water until a soft dough forms. Knead for 5-7 minutes until smooth.
- Gently fold in the spinach and cottage cheese until evenly distributed.
- Cover with a kitchen towel and let rise in a warm place for about 60 minutes or until doubled in size.
- Punch down the dough, divide into equal pieces, roll each into a ball, and poke a hole in the center to form bagels.
- Bring a large pot of salted water to a gentle boil. Boil bagels for 1-2 minutes on each side.
- Preheat oven to 425°F (220°C). Bake boiled bagels on a lined baking sheet for 20-25 minutes or until golden brown.
- Let cool slightly before serving with cream cheese or your favorite spread.
Notes
For a tangy twist, substitute Greek yogurt for cottage cheese. Ensure frozen spinach is well-drained to avoid soggy bagels.
