  • 2 large eggs
  • 1 cup Greek yogurt or buttermilk
  • 1/2 cup fresh orange juice
  • 2 tbsp orange zest
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your muffin tin by lining it with paper liners or greasing it with cooking spray.
  3. Sift together the flour, baking powder, baking soda, sugar, and salt in a large bowl.
  4. Whisk together the eggs, yogurt (or buttermilk), orange juice, and zest in another bowl.
  5. Fold the wet ingredients into the dry ingredients gently.
  6. Gently fold in the blueberries.
  7. Spoon the batter into the muffin tin, filling each cup about ¾ full.
  8. Bake for 20-25 minutes or until golden and a toothpick comes out clean.
  9. Cool muffins in the pan for a few minutes then transfer to a wire rack.
  10. Serve warm with butter or honey, if desired.
