Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1 cup Greek yogurt or buttermilk
- 1/2 cup fresh orange juice
- 2 tbsp orange zest
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare your muffin tin by lining it with paper liners or greasing it with cooking spray.
- Sift together the flour, baking powder, baking soda, sugar, and salt in a large bowl.
- Whisk together the eggs, yogurt (or buttermilk), orange juice, and zest in another bowl.
- Fold the wet ingredients into the dry ingredients gently.
- Gently fold in the blueberries.
- Spoon the batter into the muffin tin, filling each cup about ¾ full.
- Bake for 20-25 minutes or until golden and a toothpick comes out clean.
- Cool muffins in the pan for a few minutes then transfer to a wire rack.
- Serve warm with butter or honey, if desired.
