  • 1 cup Cottage Cheese
  • 2 Bananas
  • 2 large Eggs
  • ½ cup Honey or Maple Syrup
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • 1 tsp Cinnamon
  • ½ tsp Salt
  • Optional: ½ cup nuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners or grease it lightly.
  2. Blend the rolled oats in a blender until they resemble a fine flour.
  3. Add the cottage cheese, bananas, eggs, honey, baking powder, baking soda, and spices to the blender. Blend until smooth yet slightly thick.
  4. Incorporate add-ins if desired, folding them gently into the mixture.
  5. Fill muffin tins about ¾ full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Cool the muffins in the pan for 5 minutes before transferring them to a wire rack.

Notes

For best results, ensure the cottage cheese is at room temperature before blending. Avoid over-blending to keep some texture in the oats.
