- 1 ½ cups Rolled Oats
- 1 cup Cottage Cheese
- 2 Bananas
- 2 large Eggs
- ½ cup Honey or Maple Syrup
- 1 tsp Baking Powder
- ½ tsp Baking Soda
- 1 tsp Cinnamon
- ½ tsp Salt
- Optional: ½ cup nuts or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners or grease it lightly.
- Blend the rolled oats in a blender until they resemble a fine flour.
- Add the cottage cheese, bananas, eggs, honey, baking powder, baking soda, and spices to the blender. Blend until smooth yet slightly thick.
- Incorporate add-ins if desired, folding them gently into the mixture.
- Fill muffin tins about ¾ full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Cool the muffins in the pan for 5 minutes before transferring them to a wire rack.
Notes
For best results, ensure the cottage cheese is at room temperature before blending. Avoid over-blending to keep some texture in the oats.
